TASTING NOTES
A straw-yellow colour with golden nuances and the occasional greenish highlight. The aroma is intense and complex but varietal with very pronounced terpenes. Its characteristic Muscat aromas work in harmony with honey, petals and raisin notes.
The palate is rich, graceful and sweet, with a balancing acidity.
VINIFICATION
In the vineyard, the plots with the best potential for developing the Muscat grapes’ characteristic terpenes are chosen. The grapes are collected early in the morning to avoid oxidation. The harvest is brought into the winery and the process continues through destemming, crushing and transferring the wine to tanks, where it will be macerated for around 8 hours at a low temperature.
After the must has spent this time in contact with the grape skins, which will provide the distinctive personality of Moscatel Ainzón, alcohol is added to prevent fermentation from starting.
This addition also helps to extract the compounds that will contribute to fully developing the wine’s body and ensures that the variety’s characteristic aromatic compounds are preserved.
