TASTING NOTES
A straw-yellow colour with the occasional greenish highlight.
Hints of ripe fruit, yeast and hay work in harmony in its medium-high intensity nose. It offers a dry, fleshy and very well-balanced palate with abundant but very fine bubbles.
VINIFICATION
Once the varieties have been collected separately by hand, they are crushed and destemmed.
A few hours after being transferred to stainless steel tanks, all of the free-run juice is extracted in order to ferment it separately at a temperature of 16ºC, which is how we obtain our base wine. A second fermentation transforms this into sparkling wine. This is the traditional method known as “champenoise”. The cava is aged for nine months, allowing the yeast to fully develop the aromatic character of the cava, giving it great personality.
