TASTING NOTES

A clean, transparent lemon-yellow colour with greenish nuances. Good aromatic intensity, with a hint of white and exotic fruits (lime, passionfruit), along with fragrant herbs (fennel). Lively acidity on the palate, rich, fresh and long-lasting.

Bodegas Ainzón vinificación

VINIFICATION

The grapes are collected in the early hours of the morning to keep them at a low temperature. These grapes have been monitored by the technical team throughout the summer season. Once in the winery, they are destemmed and crushed to fill the tanks exclusively with the fruit, maintaining the cool temperature throughout this process.

Pre-fermentation maceration is performed at around 8-10ºC for a few hours (between 6 and 8), which helps to extract the typical flavours of the Verdejo variety. Pressing is the next stage, after which the freshly-pressed wine is transferred to a tank, the must is allowed to settle naturally and, once the wine is clean, fermentation is carried out at no more than 14-16ºC.

The finest lees from the process are kept with the finished wine for two months and bâtonnage is performed to create a more full-bodied mouthfeel.
